This recipe for Sunny Side Up Eggs is delicious, served on a bed of buttery-garlic wilted arugula. Serve with whole grain toast for a tasty breakfast that is low in calories and full of flavor.

Ingredients needed:

  • Butter
  • Garlic
  • Baby arugula
  • Eggs
  • Sea salt + cracked black pepper

How to Make Sunny Side Up Eggs with Wilted Arugula:

  1. In a non-stick skillet, melt the butter over medium low heat. Swirl the butter in the pan to coat the bottom.
  2. Stir in the sliced garlic and cook until lightly golden, stirring frequently.
  3. Add the arugula and toss with tongs or a spatula to coat well. Cook and stir until the arugula has wilted and is tender, about 3 minutes.
  4. Crack two eggs gently on the bed of arugula. Cook without flipping until the egg whites are completely set but the yolk is still runny.
  5. Gently slide the arugula and eggs onto a plate and sprinkle lightly with sea salt and cracked black pepper.

TIP: If you are having trouble getting the egg whites to set, cover the skillet with a lid.
